Paleo in a Food Desert: How to make a Tanka Dog egg bake
I recently worked as a team in the Tanka kitchen with our business manager Dawn Sherman and we created a fantastic egg bake.

We kept it as paleo as possible but added a little cheese on top which is absolutely optional. The most important ingredient, of course, were some of our Tanka products. This time we used Tanka Hot Dogs.

All of the ingredients can be found here locally on the Pine Ridge Indian Reservation although pastured, free-range eggs (which are ideal and better for you) are difficult to find in drought conditions. Even in Rapid City, about 90 miles outside of the reservation, pastured eggs are rare in a cold climate location like South Dakota, as one natural food store informed me. You just have to keep doing your research and do the best you can! Occasionally you get lucky.

Here is the recipe:

12 eggs scrambled eggs for one large pan
1/2 onion
1 green pepper
1 package of mushrooms, sliced
3 Tanka Dogs, sliced
Salt and pepper to taste

Mix together & pour into a large casserole dish
Cook for 1/2 an hr on 350 or until eggs are firm
Optional: Top with desired cheese
Slice and serve


This dish went over well and is a surefire dinner delight for any household.
